French Cuisine With a Twist to Chez Soi's Old Digs

And new life in the space there is. The interior and exterior space have been completely overhauled since the change in ownership. It’s now filled with white walls, primarily blue seating and marble tabletops (the layout could change depending on where people like to sit, says David), and other elements like tiled walls, a wine cooler and sleek bar. There’s also a menu in development, but this will take time. 

“Everything on the menu will have a twist,” Tab, former marketing manager of Chez Soi, tells me enthusiastically. This is echoed by David, who says they’ll have a simple menu of mainly southern French dishes to start out, particularly lots of fish, but it will either expand or contract with demand or change based on season.  french cuisine Taipei
There will also be a focus on enhancing flavors with unexpected ingredients. “For instance, with duck and a few other dishes, I’ll use Japanese elements like miso or dashi” explains David. “I feel like Japanese works well with French; Japanese has a nice umami that can elevate other cuisines.”

全麥麵包陷阱多!少1成分營養全沒了 醫揭真相:沒比較健康

現代人講究養生,重視健康飲食,外科醫師江坤俊表示,多數民眾認為全麥麵包餐盒較白麵包健康,但市售的全麥麵包其實暗藏非常多陷阱,廠商為了讓全麥麵包口感滑順、好吃,製作過程中添加雞蛋、飽和脂肪、焦糖增加香氣外,還剔除胚芽,不僅使熱量變高,80%以上的營養也流失,建議購買全麥麵包前先看包裝成分表,若小麥成分含量有51%以上、沒有其他添加物,才可以買。
江坤俊近日於《健康2.0》YouTube指出,一般人認為全麥麵包的熱量和脂肪量比白麵包低,但市售的全麥麵包有非常多陷阱,熱量和脂肪量與白麵包餐盒幾乎沒差異,沒有想像中健康。
江坤俊說,全麥麵包是用小麥做出來的,口感較硬較不好吃,很多廠商為了讓口感變得鬆軟、順口,製作過程中添加雞蛋、飽和脂肪,甚至加焦糖增加香氣,導致它的熱量和白麵包差不多,飽和脂肪量也升高。
江坤俊表示,全麥麵包餐盒應該要用完整的小麥製作,完整的小麥中含有胚芽、胚乳、麩皮,但胚芽容易酸敗,廠商為提高製作方便性,把胚芽去除,胚芽一旦去除,營養成分就會流失,因為小麥有80%以上的營養都在胚芽裡。
江坤俊說,購買全麥麵包前可先查看包裝上的成分表,確認是否用完整的小麥製作,小麥成分佔全麥麵包的51%以上就可以買,若沒有超過51%,當中的維生素、礦物質含量就會和一般白麵包無差異,除此之外也可看食品標示中,有沒有很多的添加物,再決定要不要買。
江坤俊提醒,若在市面上買到的全麥麵包吃起來鬆軟,口感和一般麵包一樣好吃,要特別小心,有可能是經過處理的全麥麵包。

台式麵包熱量排行曝光! 冠軍高達565大卡

台式麵包餐盒美味可口,受到不少人喜愛,不過營養師就公開了市面上常見販售的台式麵包熱量,第一名並非奶酥麵包或菠蘿麵包,而是由熱量高達565大卡的蔥花肉鬆捲奪冠,而常吃的大蒜麵包、奶酥麵包,一個都超過400大卡,營養師建議最好挑選全穀麵包,才能吃得健康。

麵包中的熱量之王是由熱量高達565大卡的蔥花肉鬆捲奪下。營養師張斯蘭表示,「蔥花麵包它上面會加美乃滋,再加上可能會加上肉鬆,它脂肪比例是高的。」
台式麵包熱量排行第一名蔥花肉鬆捲高達565大卡,等於吃一個便當,第二名奶酥麵包542大卡,第三名肉鬆麵包也有439大卡,營養師說尤其含有油脂跟糖熱量會更高,其他常見麵包像是香蒜麵包第四名422大卡,受歡迎的紅豆麵包以及菠蘿麵包吃一個也都超過300大卡。

營養師籲挑麵包「全穀麵包餐盒、堅果」 切勿天天吃
然而麵包到底該怎麼吃比較健康?營養師張斯蘭表示,「我們會建議說麵包的部分我們可以選擇全榖雜糧類的,全麥或者是裡面有加一些堅果等,這個是對身體比較好的一些營養素,升血糖速度是比較低的。」
營養師建議可挑選全穀物成分,例如全麥麵包或搭配蛋白質食物,例如鮮乳或無糖豆漿等,最好以果乾、堅果為餡料,最重要的是避免長期只用一個麵包當作正餐,麵包口感令人無法抗拒,適量吃、聰明選擇才不會越吃越發福。

光輝十月 永康救國團向防疫英雄致敬

【勁報/記者于郁金/臺南報導】救國團永康區團委會於5日由會長邱蔡進偕同市團總幹事葉慶壽等率領義工十多人,慰問大灣消防隊,分別由消防隊長黃華龍、義消分隊長謝源昌、婦宣分隊長蘇愛惠等代表接受餽贈儀式,感謝其在防疫期間在第一線為民眾付出奉獻心力,守護我們健康與家園。 永康救國團總幹事林惠卿表示,在疫情擴散第1年,大型接種站醫護人員架設一道防護網,為民眾施打疫苗而常常無法好好坐下來吃飯,於是我們準備手作烘培點心、水果、饅頭、飲料給注射站醫護們,在稍微有空檔時候可填一下肚子;疫情第2年疫情仍舊發燒,捐血中心醫護是儲備醫療量能幕後功臣,救國團致力於募血公益,致敬對象就是捐血中心醫護們;這次是第3年,救國團致敬對象是消防人員,感謝他們消毒救災日夜守護我們家園。

救國團永康區團委會邱蔡進會長表示,我內人本身就是大灣消防宣傳隊成員,有感於消防英雄所承受壓力與體力耗損更大,這次特別將餐盒內手作麵包餐盒,特別請手作坊師傅做「椪餅」來致贈,這是臺南特別的傳統美食,用麻油煎椪餅再加個蛋後食用,是最滋補養生料理,希望能給防疫消防英雄好好補一下。 救國團市團總幹事葉慶壽表示,非常感謝在這次物資募集受到各界熱情支持,除了防疫必備「全罩式防疫護目鏡」400組外,還有第五大隊顧問團團長蔡承穎、吉得堡幼兒園老師親友李梅玉加菜金贊助,臺南市特殊情境家庭關懷協會理事長蔡惠琴也致贈100斤香蕉,市議員候選人許崇洲贊助飲料、林冠維市議員候選人也致贈防疫口罩給每位防疫英雄,很感恩現在正在臺北做饅頭給惜食食堂長輩們吃的「環島愛心饅頭」伉儷捐贈150顆手作饅頭,與防疫英雄們分享。 疫情3年期間,永康區救國團連續3年都有安排「向防疫英雄致意」活動,整個過程讓人深刻體會到善愛循環與感染,讓公益心永遠流傳下去。
